慢炖锅炖蔬菜

Ingredients

  • 1/2磅(230克)茄子,去皮,切块
  • 1茶匙(5毫升)粗粒盐
  • 3个蒜瓣,剁碎
  • 1个中等大小的洋葱,切碎
  • 1个小南瓜,切块
  • 1个小西葫芦,切块
  • 1/2个青椒,去籽,切丁
  • 1/2个红辣椒,去籽 
  • 1/2个黄辣椒,去籽,切丁
  • 1罐(15.5盎司/440毫升)切丁的番茄
  • 2汤匙(45毫升)番茄酱
  • 1茶匙(5毫升)盐
  • 1/2茶匙(2.5毫升)辣椒酱
  • 1/2茶匙(2.5毫升)粗黑胡椒粉
  • 1汤匙(15毫升)切碎的新鲜西芹
  • 1汤匙(15毫升)切碎新鲜罗勒

Directions

  1. 将切块的茄子放进一个大的滤器里,向茄子上均匀撒盐。放置1个小时。冲洗,然后用厨房用纸巾拍干。
  2. 向一个大碗中加入茄子、大蒜、洋葱、南瓜、西葫芦、辣椒、切丁的番茄、番茄酱、盐、辣椒酱和黑胡椒粉,搅拌,使其充分混合。
  3. 将茄子混合料加入铁制内胆。
  4. 盖上盖子,并以高档慢炖4至4 1/2小时,或以中档慢炖8至9小时。
  5. 食用前,撒上切碎的西芹和罗勒。
