白果肚片汤

Ingredients

  • 猪肚 1个
  • 白果 15--30颗
  • 枸杞 几颗
  • 黑木耳 1把
  • 白胡椒 适量
  • 八角 适量
  • 姜片 适量
  • 香叶 适量
  • 花椒 适量
  • 盐 适量
  • 桂皮 适量

Directions

  1. 猪肚加入盐, 用力搓洗, 再用清水冲洗干净, 正、反面重复两遍;
  2. 再用面粉搓揉, 用水冲洗干净,正、反面重复两遍;
  3. 用剪刀剪去猪肚里的油脂;
  4. 用白酒、酱油一起搅拌抹匀猪肚,然用清水冲洗干净备用;
  5. 冷水下锅,加入几片姜,再放入猪肚一起煮上3--5分钟;
  6. 捞出来后用刀子刮掉白白的膜;
  7. 准备好姜片和其他调味料,并将其他调味料放入调味料钢球中,方便以后一次性取出;
  8. 肚片切成拇指宽的长条放入慢炖锅中, 再加入姜片和调味料钢球;
  9. 加入适量的开水, 水要一次性加足;
  10. 加上盖, 两边扣紧, 转为高温键炖上一个半小时;
  11. 加入白果和黑木耳,再加盖转低温键炖煮半个小时;
  12. 最后加入白胡椒和盐调味, 加入几颗枸杞;
