泡椒猪手

Ingredients

  • 猪手 2个
  • 泡椒 适量
  • 桂皮 适量
  • 八角 适量
  • 糖 适量
  • 盐 适量
  • 白醋 适量
  • 白酒 适量
  • 香叶 适量
  • 花椒 适量
  • 姜片 适量
  • 红辣椒 适量
  • 小茴香 适量

Directions

  1. 切成块的猪手, 凉水下锅, 放入姜片, 烧开;
  2. 煮开, 将猪手撇去浮沫洗干净后备用;
  3. 将焯过水的猪手放入慢炖锅中,加入适量的开水和少许的白醋;
  4. 盖上锅盖,开高火,慢炖一个半小时;
  5. 将桂皮、花椒、香叶等大料放入调味料钢球中再冲洗干净备用;
  6. 调味料球放入锅中,再加入姜片、红辣椒、糖和盐,一起煮锅开水,水开后再煮上五分钟;
  7. 将煮好的开水, 放入碗中放凉, 再加入泡椒及泡椒水;
  8. 待猪手煮好后加入适量的盐,再加盖焖煮十分钟;
  9. 将煮好的猪手捞出放入准备好的泡椒水中;
  10. 再加入点泡椒水和白醋, 使得猪手完全浸入泡椒水中;
  11. 加入点高度白酒;
  12. 盖上盖, 密封放入冰箱中泡上一整天;
