水晶蹄筋冻

Ingredients

  • 牛蹄筋 4根
  • 鸡蛋 1个
  • 水 适量
  • 盐 适量
  • 酱油 适量
  • 黑胡椒 适量
  • 香菜 适量
  • 蒜 适量
  • 姜 适量
  • 葱 适量
  • 醋 适量
  • 麻油 适量

Directions

  1. 干牛蹄筋用水泡发1天,洗净后切成细小的丁状;
  2. 按牛蹄筋:水=2:1的比例将蹄筋放入慢炖锅中,加入适量的水;
  3. 调至高温档位,煮开后加入适量的盐、酱油、黑胡椒粉,改低温档位慢慢熬煮,直至将蹄筋的胶质充分的熬煮出来;
  4. 出锅前加入搅打好的全蛋液,搅匀,稍凉后倒入保鲜盒中冷藏;
  5. 冷藏至固体后切块,佐以香菜末、蒜末、姜末、葱丝、醋、麻油拌匀即可食用;
